Aunt B’s Upside Down Apple Pie

  • 4 Tbsp butter
  • 1/4 cup brown sugar
  • 1Tbsp corn syrup
  • 1/3 cup chopped pecans
  • 4 cups chopped apples
  • 3T corn starch
  • 1 cup sugar
  • 3/4 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/4 tsp salt
  • 2 Tbsp butter
  • 2 pie crusts

In small pan, melt butter and brown sugar (stir and remove from heat when melted…do not allow to cook).  Grease straight side pie pan and add corn syrup to mixture, stir and pour into pie pan.  Sprinkle with pecans.  Roll out pie crust and place on top.  Mix together apples, corn starch, sugar, cinnamon, nutmeg, and salt.  Cut 2T butter in small pieces and sprinkle on top of mixture.  Put on top crust.  Seal and pinch edge of crust  (make sure edges are well sealed so the juices don’t leak out).  Bake at 350 degrees for 20 minutes.  Reduce heat to 300 degrees.  Bake for 30 additional minutes.  Put serving dish on top of a pan and flip over…UPSIDE DOWN APPLE PIE!!
